Lemon sorbet
- 300 ml lemon juice (~7 lemons)
- 150 ml lime juice (~6 limes)
- 200 g sugar
- 400 g water
- 60 g dextrose
- pour the water, sugar and dextrose into a pan
- boil, and let boil for 2 to 3 minutes
- let it cool completely
- pour the lemon and lime juice in a bowl
- add the cooled syrup
- let it rest in the fridge for 6 hours
- churn into sorbet
