Coleslaw

This recipe is not entirely “traditional”, if there even is such a thing, but it is fairly tasty. There are about a million variants on coleslaw, so do as you please.

This recipe will make just over 1 kg of coleslaw, which is enough for 6 people.

Ingredients

Vegetables

  • 700 g white cabbage
  • 175 g carrots
  • 125 g dark raisins
  • 1 green apple
  • 1 small (red) onion

Dressing

  • 100 g mayonnaise
  • 125 g sour cream
  • 1 tbsp white wine vinegar (or apple cider vinegar)
  • 1 tsp mustard (or 2 if you like)
  • a splash of lemon juice
  • a pinch of cumin
  • pepper, salt

Directions

  • soak the raisins in 40-50 °C water for 10 minutes
  • cut the cabbage, carrots, onion and apple in thin strips (julienne)
  • in a bowl, mix the mayonnaise, sour cream, vinegar, mustard and cumin to make a dressing
  • add pepper and salt and a splash of lemon juice to taste
  • mix the slaw and the raisins with the dressing
  • store in the fridge for at least 1 hour (ideally overnight)
  • serve cold
