Coleslaw
This recipe is not entirely “traditional”, if there even is such a thing, but it is fairly tasty. There are about a million variants on coleslaw, so do as you please.
This recipe will make just over 1 kg of coleslaw, which is enough for 6 people.
- 700 g white cabbage
- 175 g carrots
- 125 g dark raisins
- 1 green apple
- 1 small (red) onion
- 100 g mayonnaise
- 125 g sour cream
- 1 tbsp white wine vinegar (or apple cider vinegar)
- 1 tsp mustard (or 2 if you like)
- a splash of lemon juice
- a pinch of cumin
- pepper, salt
- soak the raisins in 40-50 °C water for 10 minutes
- cut the cabbage, carrots, onion and apple in thin strips (julienne)
- in a bowl, mix the mayonnaise, sour cream, vinegar, mustard and cumin to make a dressing
- add pepper and salt and a splash of lemon juice to taste
- mix the slaw and the raisins with the dressing
- store in the fridge for at least 1 hour (ideally overnight)
- serve cold
