Brownies

This recipe makes 9 servings.

Tools

  • 20 cm (square) baking dish
  • parchment paper
  • large bowl
  • mixer
  • sieve

Ingredients

  • 225 g dark, semi-sweet chocolate (8 oz)
  • 170 g butter (1.5 sticks)
  • 250 g sugar
  • 2 eggs
  • 10 ml vanilla extract
  • 95 g all-purpose flour
  • 30 g cocoa powder
  • 6 g salt

Directions

  • preheat the oven to 180°C (350°F)
  • line the baking dish with parchment paper
  • chop the chocolate into chunks
  • melt half of the chocolate (au bain-marie, preferably)
  • melt the butter
  • add the butter and sugar to the bowl and mix with a mixer
  • add the eggs (whole) and vanilla and mix for 1 to 2 minutes until fluffy and light
  • gently whisk in the melted chocolate (make sure it is not hot, don’t cook the eggs!)
  • sift in the flour, cocoa powder and salt
  • fold to incorporate, do not mix too much!
  • fold in the chocolate chunks
  • pour the batter into the baking dish
  • bake for 20 to 25 minutes (longer = less fudgy)
  • let it cool
  • slice into 9 squares
