Brownies
This recipe makes 9 servings.
- 20 cm (square) baking dish
- parchment paper
- large bowl
- mixer
- sieve
- 225 g dark, semi-sweet chocolate (8 oz)
- 170 g butter (1.5 sticks)
- 250 g sugar
- 2 eggs
- 10 ml vanilla extract
- 95 g all-purpose flour
- 30 g cocoa powder
- 6 g salt
- preheat the oven to 180°C (350°F)
- line the baking dish with parchment paper
- chop the chocolate into chunks
- melt half of the chocolate (au bain-marie, preferably)
- melt the butter
- add the butter and sugar to the bowl and mix with a mixer
- add the eggs (whole) and vanilla and mix for 1 to 2 minutes until fluffy and light
- gently whisk in the melted chocolate (make sure it is not hot, don’t cook the eggs!)
- sift in the flour, cocoa powder and salt
- fold to incorporate, do not mix too much!
- fold in the chocolate chunks
- pour the batter into the baking dish
- bake for 20 to 25 minutes (longer = less fudgy)
- let it cool
- slice into 9 squares
