Banana muffins
This recipe will yield 10 to 12 muffins.
- 250 g flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 4 large, ripe bananas (about 400 g)
- 90 g butter
- 30 g margarine
- 160 g sugar (light or dark brown is best)
- 2 eggs (small)
- 1 teaspoon vanilla extract
- 40 ml milk
- chocolate chips, chopped nuts (optional, 1 cup)
- preheat the oven to 220 °C
- prepare 12 to 14 cupcake liners or use a muffin pan
- whisk together the flour, baking soda, baking powder, cinnamon, nutmeg and salt
- in another large bowl, mash the bananas
- melt the butter and margarine
- using a mixer, beat in the butter and margarine, sugar, egg, vanilla and milk
- poor in the flour mixture
- fold in with a spatula
- add in the chocolate chips or nuts (optional)
- spoon the mixture into the liners, fill all the way to the top
- bake for 5 minutes at 220 °C
- reduce the heat to 175 °C and bake for another 16 to 18 minutes (use a toothpick to test)
- let them cool down
- cover and store at room temperature
The taste is good, but the cake is way too dense.
